Cooking and biopsy results

I called the GI doctor today to see if my biopsy results were in.  They were.  I do not have celiac disease!  However, wheat does really hurt my stomach and the doctor has mentioned a wheat intolerance (due to the fact I get pretty severe digestive problems from eating wheat but no respiratory problems).  I did find out that one of the polyps was pre-cancerous.  Basically, my stomach pain may have saved my life.  If I hadn't been having so much pain and hadn't gone in to get tested we would not have found that polyp until it had most likely turned into cancer.  I will now have to go in for regular endoscopies.  This will likely be every 3 to 5 years.  I have a follow up appointment in a week and a half and then another appointment in 3 months, so I will find out more.  I also found out today that I have gastritis and mild esophagitis.  Basically that means that I have inflammation in both my stomach and esophagitis due to acid.  This explains some of my symptoms, but not all of them.  I did, however, read that esophagitis can be caused by food allergies.  It is possible, then, that the wheat problem is causing all of it.  I am anxious for my appointment so I can ask more questions.
I have been wanting to find a good cookie mix for gluten free sugar cookies.  While I now know for sure that I do not have celiac disease, I still can't really eat wheat, so I will continue to eat a lot of gluten free products.  We tried out a box mix tonight.  Graesen had a lot of fun helping me.  And this mix requires no eggs, so he could eat all the dough he wanted :)






The cookies were actually really good!  I was so happy, because so often the gluten free versions of things do not taste very good.
